Has a mild, rich and savory taste along with meaty texture when cooked. Largest variety of the Oysters originally cultivated in Europe and the Mediterranean.
A large oyster but not as large as King variety. Similar taste to King but with perhaps a bit of spiciness reminiscent of star anise or clove. Mild and savory.
Typical culinary oyster used in Asian style cooking. Mild and adds plenty of umami when cooked.
A mild oyster with a very slight earthiness or smokiness that is almost undetectable, otherwise same delicious and savory oyster mushroom flavor.

Uncommon and tasty culinary mushroom that retains its raw texture after cooking. Adds a bit of crunch or unexpected mouth feel to recipes. Has a rich - but slightly herbaceous flavor. Not to be confused with common grocery store mushrooms sometimes called "chestnut" like criminis, brown button, porcini, etc.
Famous mushroom used in Japanese and many different styles of Chinese cooking, particularly Fujian & Jiangsu. Our cave grown specimens are of the highest quality (dōnggū & huāgū) due to the low temperature and high humidity of our cave.
A seasonal mushroom (not grown in the cave) is fantastic grilled. Can reach very large sizes.

We grow these on substrate in the cave, and they seem to taste just like the wild ones we encounter in the woods on our farm although they are quite a bit smaller in size. Has a flavor and texture evocative of excellent lobster. One of the best mushrooms to eat by itself as a main. Some people believe eating it will help with dementia and other neural issues, lower blood pressure and help with depression.
Similar to lions mane but flavor and texture more like the desirable lump crab meat. Makes a fantastic "crab" cake. Similar health benefits as Lion's Mane are attributed to Comb Tooth by believers.
A seasonal mushroom (not grown in the cave). White flesh or cap tastes like chicken breast, and has similar texture.

Seasonal (not grown in the cave) Made into teas and decoctions in traditional Asian medicine. Very bitter tasting and not used for culinary purposes.
Seasonal (not grown in the cave). Historically a culinary mushroom in the USA (1890s - 1920s). Has a sweet and almond/nutty taste. Commercially replaced in the early 20th century with button mushrooms. Claimed to have anti-cancer and antioxidant properties by aficionados. We make no claims about these but sometimes grow them in our tomatoes.
